Ingredients for Mint Rice / Pudina Pulao
Ghee - 3 tbs
Rice - 1 Cup
Coriander leaves - 1 cup
Mint leaves - 100 grams
Green Chilies - 3
Onion - 1
Tomatoes - 2
Garlic - 4 cloves
Ginger - small piece
Cumin Seeds - 1 tsp
Cinnamon - 1
Cardamon - 2 pods
Clove - 2
Bay leaf - 1
Star anise - 1
Coriander powder - 1/2 tsp
Chili powder - 1/4 tsp
Garam Masala - 1/4 tsp
Salt
Water - 2 cups
Method for Making Pudina Rice
1. Take mint leaves, coriander leaves, ginger, garlic and green chilies. Grind it to a fine paste.

2. Take a pressure cooker. Add 3 tbs of ghee. Heat it up.

3. Add cinnamon, cardamon, cloves, bay leaf, star anise and cumin seeds to the oil. Let the cumin seeds splutter.

4. Add chopped onions and saute it for a minute.

5. Add chopped tomatoes and then add coriander powder, chili powder and garam masala.

6. Add the ground mint paste and add salt.

7. Keep the cooker in low flame and cover it with lid. Let it cook for 5 minutes.

8. Add 2 cups of water and add the soaked rice. Stir it well and cover it with lid.

9. After the 1st whistle, lower the flame and cook it for 10 minutes.
10. After the rice is cooked well, give it a good stir.
