Lemon Rice
Lemon Rice Recipe

Ingredients

  • Rice – 1 cup

  • Green chilies – 4

  • Curry leaves – handful

  • Garlic - 2 (optional)

  • Salt – ¾ tsp

  • Turmeric – ½ tsp

  • Red chilies – 2

  • Mustard seeds – ½ tsp

  • Black gram dal – 1 tsp

  • Channa dal – 1 tsp

  • Peanut – 2tbs

  • Lemon – 2

  • Water – 2 cups

  • Oil – 3tbs

Method

  1. Cook rice and keep it aside. Make sure the rice is not sticky.

  2. For the tempering:

  3. In a pan pour oil, after the oil has heated up add mustard seeds, channa dal, udad dal, dried red chilies and peanut. Saute it well till the lentils become golden brown while the flame is low.

  4. Add green chili, garlic and curry leaves. Saute it well for half a minute until the garlic cooks well.

  5. Switch off the flame and add turmeric powder to the hot oil so that it doesn’t get burned. Give it a good stir.

  6. Add rice to the pan and mix well. Make sure the rice is not too warm.

  7. In a bowl squeeze lemon and add salt.

  8. Add the salt and lemon juice in the pan.

  9. Mix the rice, tempering and the lemon juice together.

  10. Transfer it to a serving bowl.

Note – The rice has to be in room temperature because if the rice is too warm then when adding lemon juice, it will become bitter.

Add salt with lemon juice or else the salt wont get mixed well with the dry rice.
