Authentic Kalyana Sambar Recipe - The One Served in Marriages

This recipe if for authentic kalyana sambar. This sambar is served popularly in Southern India. It is delicious and is best served with hot rice.
Ingredients
Okra – 1 cup
Onion – 1
Curry leaves – ½ cup
Toor dal – 1 cup
Tamarind – gooseberry size
Grated Coconut – ½ cup
Coriander seeds – 2 tbs
Dried red chilies – 7-8
Mustard – ¼ mustard
Turmeric powder – ¼ tsp
Asafoetida – ¼ tsp
Fenugreek seeds – ¼ tsp
Channa Dal – 1 tsp
Udad Daal – 1 tsp
Water – 3 cups
Salt
Oil – 2 tbs
Method
For sambar paste:
In a pan add 1 tsp of oil.
Add coriander seeds, red chili, udad dal, channa dal and fenugreek seeds. Roast it for 3 mins while keeping the flame low. Do not roast it in high flame.
When the spices become golden brown in colour add chopped onions, curry leaves and grated coconut and sauté it for 1 minute. Make sure the lentils don’t get burnt.
Switch of the flame and add asafetida.
Add little but of water and ground the mixture into a fine paste.
In a pot, add oil, mustard seeds and let it splutter.
Add okra and curry leaves and sauté it for 1 minute.
Add tamarind pulp and add 3 cups of water, turmeric and salt and bring it to boil.
After 5 minutes add the sambar paste. Let it simmer for 5 miniutes.
In the meantime pressure cook the toor dal.
Add the cooked toor dal in the pot, if the mixture it too thick then add and simmer it for 5 minutes so that the toor dal and the sambar mixture cooks well.
