Bharta Baingan Recipe | Eggplant Bharta

Try this delicious bharta baingan recipe. This is my favorite way to prepare eggplant. This goes really well with phulka. Perfect for lunch or dinner when you are looking for something spicy.
Ingredients
Egg plant -1 big size (250 gm)
Onion -1 big size
Tomato - 2
Garlic - 6 cloves
Ginger - a small piece
Green chilies -4
Oil - 2 tbsp
Cumin seeds - 1/4tsp
Coriander powder - 1 tsp
Red chili powder - ¼ tsp
Turmeric - ¼ tsp
Salt - ½ tsp or as per your taste
Coriander leaves to garnish
Method:
Apply 1 tsp oil to egg plant and put it directly on the low flame .
Roast the egg plant till it is cooked well.
Immerse the roasted egg plant in a bowl of water to cool it down.
Remove the skin. Now the smoky egg plant is ready to use for our bartha baigan recipe.
In a pan add oil. When it gets heated add cumin seeds.
When it splutters add chopped onion and sauté it well.
Add ginger and garlic paste. Saute the onion and ginger garlic paste for 1 minute.
Add turmeric, 1/4 salt and coriander powder and sautés it for 1 minute.
Adding salt in the onion will reduce the use of oil.
Add chopped tomato, green chilies, red chili powder and remaining salt.
Cook it in low flame for 3 minutes.
Add peeled egg plant to the pan and mix it well.
Cook it in low flame for 2 minutes.
Transfer it in a serving bowl and garnish it with coriander leaves.
